Matthew Cooke always looked forward to Thanksgiving week and the work that would go into it.

Cooke, the grand knight for the Fairview Knights of Columbus, Council 4044, in Chicopee, said in previous years he would spend up to 50 hours doing prep work in the days before than annual Thanksgiving dinner for the less fortunate. And on the day of the dinner, he would put in another 17 hours — from 3 a.m. until 8 p.m. — to help things run smoothly.

“I would walk out with a smile on my face. It was such a good feeling,” he said. The Knights of Columbus will not be hosting the annual dinner next week. The event, like just about everything else, has fallen victim to COVID-19 and the state’s restrictions on gatherings of 10 or more people.
